Cake pops

I saw them and loved them. Loved these bites of juicy cake with the delicious chocolate coating, that stand on top of the lollipop sticks, often with imaginative decoration. Had entered my "to do" list immediately.

Oh ! they look lovely !! Their appearance worth the job needed to be done . Bake your favorite cake and decorate according to your taste. The photos in this post, show the cake pops I prepared along with the meringue cookies for the christening of Vassiliki . For these, I've chosen simple things ... pink chocolate and white truffles !

Ingredients :

 
  • 800 gr chocolate cake (cooled)
  • 4 tbsp frosting
  • 400 gr white chocolate
  • pink food coloring
  • fine white sprinkles for decoration

  • 85 gr chocolate
  • 1/3 cup butter (softened)
  • 3 cups icing sugar (sifted)
  • 2 tsp vanilla extract
  • 2-3 tbsp milk
 

Preparation :

  1. Melt chocolate in bain-marie. Let aside to cool down.
  2. In your stand mixer's bowl, beat butter on low speed until fluffy.
  3. Add gradually the sifted icing sugar. Continue beating.
  4. Stir in vanilla and mix.
  5. Add melted and cooled chocolate and beat till all ingredients combined.
  6. Add milk by spoonful until frosting becomes smooth and spreadable.
  7. Let aside.

  1. In a big bowl, crumble the cake with your hands.
  2. Mix in frosting till combined.
  3. Get a portion from the mixture and form big walnut size balls.
  4. Place them in a baking tray lined with parchment paper.
  5. Place tray in the freezer for 15 minutes to firm up a bit.
  6. Melt 50 gr of white chocolate.
  7. Get tray from the freezer, dip lollipop sticks in the melted chocolate and insert into balls, pushing it till halfway.
  8. Place in freezer for 15 more minutes.
  9. Melt rest of the chocolate and add as much food coloring as needed according to the color you want to get.
  10. Take cake pops off the freezer.
  11. Dip cake pops, by holding them from the stick, into the melted chocolate in a way that entire cake pop is coated with chocolate. Tap off any excess chocolate.
  12. Sprinkle with white sprinkles and place them in a stryrofoam block.
  13. Place in the fridge for half an hour and you're done.
