Tartelettes with hazelnut praline

 

I adore chocolate. I would lie if I say it's the only dessert I eat, but the chocolate its on the top of my favorites list. Chocolate ... slourp From a plain bar of chocolate ... chocolate candies ... until chocolate mousse and chocolate cake.

Chocolate ... oh gosh ! As you can tell, the current recipe has to do with chocolate. The chocolate mixed with hazelnut praline create a filling that makes these tarts divine. The recipe neither difficult nor easy . Needs some attention to procedures and of course some time to prepare it.

But .. it's worth the try.

 

 

The tartelettes are not the classic ones you can find in pastry shops. Has a more like a cookie texture that makes the difference in this handmade dessert. The praline is so tasty and I'm sure will find a role in your other sweet creations.

Would advise you to read a couple of times the recipe and the instructions herebelow and get properly organized. Have all ingredients at room temperature . If needed, in the dough, add a bit more flour so that doesn't stick to your hands. Since I didn't have as molds as needed, I used my muffin tray which I turned upside down , buttered and placed on top the discs I cut from the dough (see photo at the end of the post).

Pay extra attention to the caramel. Do not touch it, as may cause you burns due to the high temperature. Breaking the praline in the blender takes enough time, so there is a possibility to heat the moter up. Be careful not to "burn" in . Stop the blender periodically and restart, until you have the desired effect. Do not boil the heavy cream, just warm it up a bit, in order to melt the chocolate. I think the above instructions will make the whole procedure easier.

Last but not least, I suggest you give a boost to your tartelettes with a sprinkling of fleur de sel over praline ... taste reaches to the heavens , believe me !

Ingredients :

 
tartelettes
  • 250 gr all purpose flour
  • 100 gr butter (cut in cubes)
  • 100 gr sugar
  • 1 pinch of salt
  • 2 eggs
hazelnut praline
  • 150 gr hazelnuts (roasted)
  • 150 gr sugar
  • 200 gr milk chocolate
  • 150 gr heavy cream
  • 1 Tbsp glucose
 
 

Preparation :

 
Tartelettes
  1. In a big bowl mix well the flour, the butter, the sugar, the salt and the eggs till combined.
  2. Keep kneading till dough is smooth and not sticky.
  3. Wrap dough in cling film and refrigerate for 1-2 hours.
  4. Preheat oven at 180C.
  5. Get dough out of fridge and put it between two parchment papers.
  6. Flatten dough with a rolling pin (1cm thick).
  7. Cut round discs with a cookie cutter and place discs on buttered muffin molds.
  8. Bake for about 15 minutes.
  9. Remove from the oven and let them cool down before un-mold.
  10. Fill tartelettes with hazelnut praline.
Hazelnut praline
  1. In a non-sticky frying pan, in medium heat, put a spoonfull of sugar and stir to disolve before you add the next one.
  2. Continue by spoonfulls till you run out of sugar.
  3. Keep stirring till liquid changes colour and becomes caramel.
  4. Add glucose and stir.
  5. Add hazelnuts and stir to be coated by caramel.
  6. Remove from heat and spread on a parchment paper.
  7. Let it cool completely.
  8. Break caramel into pieces and put them in a blender.
  9. Blend in high heat till you get a runny like honey mixture. Let aside.
  10. In a saucepan heat the heavy cream (not boil) and add the chocolate in small pieces.
  11. Stir to melt the chocolate.
  12. Remove from heat and add the praline.
  13. Mix well to combine and let it cool.
