Chocolate candies with peanut butter

 

It's something that I often do. When I go to the stores and I find a special ingredient or something that I have not used before, I buy it with no hesitation and without knowing what will do with it. So I wait till the time comes and this material will find its position in a recipe.

That was the case when I saw a jar of peanut butter on a shelf. With no particular purpose on mind, I got it. Kept in my pantry for a while but here's the day to come to the fore. The recipe was chosen , prepared and some lucky ones enjoyed the result. Chocolate candies filled with peanut butter. The combination of salty and sweet drives me crazy. I love it. Do you remember those wonderful sea salt chocolates?

Well, today's chocolate candies have passed my taste test successfully. As for the process, with no serious difficulty. As you now, there are times that I chose the hard way to do things. This time I decided to form candies at bite size and that expanded my preparation time a lot. I wanted to get the candy and when putting it in the mouth to have at once the explosion of the contrasting flavors.

 

 

For melting, I use a bain-marie , ie a sauce pan with boiling water and on top a metal or glass bowl that touches the pot but not the water . In this bowl, I melt the chocolate, with great care. For bain-marie, start boiling the water to the point that begins to steam. Place the bowl in which you will melt the chocolate on top and lower the temperature so as to keep the water vapor but not boiling.

Continue as the recipe says. Get the butter or margarine out of the fridge, well in advance, in order to soften and be easier for you to mix it with the peanut butter. To avoid surprises, make sure the baking pan you are going to use fits in the fridge when you need to place it there to firm the balls.

You will agree with me that these chocolate candies are very nice for a treat or gift. Put them into small paper cups and in a nice box. The handmade gift will surely be appreciated.

Ingredients :

 
  • 1/2 cup peanut butter
  • 45 gr butter or margarine (at room temperature)
  • 1 cup icing sugar
  • 240 gr chocolate
 
 

Preparation :

 
  1. In a bowl combine butter with peanut butter.
  2. Add icing sugar and stir to incorporate. If needed add some more sugar (a bit at the time) so that you have a batter that is easy to form in small balls.
  3. Cover bowl with cling firm and refrigerate for 15 minutes to firm.
  4. Line a baking pan with parchment paper.
  5. Get batter from refrigerator and form balls of small walnut size.
  6. Place on parchment paper.
  7. Refrigerate for another 15-20 minutes to firm.
  8. Meanwhile melt chocolate in bain-marie.
  9. Let chocolate to cool down a bit.
  10. Get peanut butter balls and immerse them in chocolate.
  11. To make this process easier, use a toothpick for holding balls and dipping them in chocolate. When covered with chocolate, tap to remove excess chocolate and put them on parchment paper.
  12. In order to remove toothpick, get a fork and place it between toothpick and ball and with extra care unpin toothpick.
  13. Put the chocolate candies in the refrigerator for a while to firm and serve.
