Cookies with cracks


It's St.Valentine's Day. My wishes to those who celebrate and you may always have people that you love around you.

I have a treat for you today but I tell you that I celebrate love every day of the year. I am so lucky that around me I have people that love me throughout the year. Cookies is the treat. I love soft cookies. The cookies that do not damage your teeth when biting. The cookies that melt as soon as you put them in your mouth. The cookies that you start with one and you only finish when the jar is empty. The cookies that make you glad.

Ahhhhhh ... soft cookies. All of the above apply to cookies that will show you. Soft, fluffy, tasty, beloved. Easy to make, yield a lot of pieces and make the perfect treat. The crackling on the surface that reveals the chocolate underneath, gives them that beautiful look.

Mmmmm .. Let's try this one!


Ingredients : 

  • 56 gr. butter (unsalted)
  • 230 gr. bittersweet chocolate
  • 100 gr. sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 195 gr. flour (all purpose)
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1 cup icing sugar (for the coating)

Preparation : 

  1. Melt chocolate with butter in bain-marie.
  2. When ready, remove from heat and cool at room temperature.
  3. In the bowl of electric mixer, beat the eggs with the sugar, until fluffy and thick as cream.
  4. Beat in the vanilla extract and the cooled chocolate.
  5. Beat till incorporated.
  6. In another bowl whisk together the flour, the salt and the baking powder.
  7. Add the dry ingredients to the chocolate and stir mixture till homogenized.
  8. Cover with cling firm and put in the fridge for a couple of hours to firm.
  9. Preheat over to 165C.
  10. Line two baking trays with greaseproof paper.
  11. Put sugar in a shallow tray.
  12. Get the mixture from the fridge and shape into balls of small walnut size.
  13. Roll the balls in the tray to be fully coated with the sugar.
  14. Place the coated balls in the tray, leaving a space of 3-4 cm in between.
  15. Bake cookies for about 8 minutes.
  16. Immediately remove from oven and let them cool down.
  17. Do not over-bake as they'll become hard.
