Savory cupcakes with yoghurt and bacon frosting .It’s an easy and delicious recipe, where the final result is an eye catcher.

This is the recipe I share with you today. There are no difficulties in preparation. Just follow the steps as described and you will have a guaranteed success. Add or alter ingredients according to your taste. The yoghurt frosting and the bacon for the decoration can be prepared well ahead thus reducing the cooking time.

I have only one note. The yoghurt frosting is a bit spicy, therefore pay attention on the addition of mustard so that you do not come up with a too “hot” frosting.

Ingredients (for about 15 pcs) :

 
  • 100 gr carrot ( grated )
  • 1 egg
  • 300 ml milk
  • ¼ tsp salt
  • 280 gr flour for all purpose
  • 2 tsp baking powder
  • ¼ tsp pepper
  • 60 gr Vitam margarine ( melted )
  • 100 gr cheese cheddar ( grated )
  • 100 gr bacon ( chopped )
For the frosting & decoration
  • 1 tsp mustard powder
  • 250 gr yoghurt
  • 3 strips of bacon

 

Preparation: 

 
  1. Preheat oven to 200C.
  2. Arrange paper cups in a muffing tray and set aside.
  3. In a small bowl mix milk, melted margarine and eggs.
  4. In a large bowl mix the flour, baking powder, salt and pepper.
  5. Combine the two mixtures and stir well.
  6. Add the cheddar, carrots and bacon and mix.
  7. Divide in muffin tray by filling in the ¾ and bake for 20-25 minutes until golden brown .
Frosting 
  1. In a bowl put the yogurt, add the mustard and stir gently to combine.
  2. Put batter in a piping bag and store in the refrigerator.
Bacon for decoration 
  1. Preheat oven to 200C.
  2. On a baking sheet covered with parchment paper spread strips of bacon.
  3. Bake for about 12 minutes.
  4. Remove grease and cook for another 5-7 minutes until the bacon is crisp.
  5. Remove from the oven and cut each strip into 5-6 pieces.
  6. Set aside.

When the cupcakes have cooled down, frost with yoghurt and place a piece of bacon on top.
