Savory cookies with cheese and sundried tomato

And you are craving to eat. Something small, something simple, something that will make you feel better. But you wonder what that could be.

Sweet or savory? Sometimes it tends to be sweet, some savory.

For the sweet part, I'm sure that, a bit of chocolate it's your choice ... at least that's mine. But when you want something savory, what do you choose? A toasted bread? A bit of cheese? or what?

Whatever that was, forget it. I will share with you a wonderful savory snack. Cookies with variety of cheese and sundried tomato. It has great taste and a size that makes it ideal for the "difficult" times . Bake a portion and you have the perfect snack for several days and handy when needed. The cheddar is giving its distinctive taste and the sundried tomato puts a little volume. It is easy to make and you do not need to watch anything really. Have your ingredients at room temperature, grind and chop them before you start to mix.

For more buttery flavor I have used the Flora with butter. It gives the smell and taste of butter without turning your cookies "heavy".

Ingredients :

 
  • 170 gr butter
  • 170 gr cheddar grated
  • 100 gr various cheeses grated (gouda, emental, gruyere)
  • 10-15 sundried tomatoes
  • 2 eggs
  • 300 gr all purpose flour
  • 1/2 tsp salt
  • 1 tsp mustard powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp dry thyme
  • 1 tsp dry estragon
 

Preparation : 

 
  1. Preheat oven at 170C.
  2. In a bowl place butter, cheeses and beaten eggs.
  3. Mix ingredients till combined.
  4. Add the sundried tomatoes and mix a bit more. Let aside.
  5. In a bowl sift the flour, mustard, paprika and salt.
  6. Add the herbs and mix.
  7. Add flour mix to the butter mix and knead.
  8. Get a portion and shape to a ball.
  9. Flatten to make a disc of 1cm thickness.
  10. Place cookies in a baking tray lined with parchment paper.
  11. Bake for about 20 minutes till golden.
