Crusted chicken with mayonnaise and herbed breadcrumbs
Chicken. The meat that most of us prefer to eat. There are countless ways of cooking it. However, the chicken is a bit indifferent to the taste. Needs salt & pepper and a spice to enhance the flavor.
Today's recipe gives a personality to the chicken. Although we use breast halves, which are generally the most "dry" parts of the chicken , the crust keeps them juicy and the spices give an incredible taste. It's a dish that I make quite often and each time is delicious. You can keep the herbed breadcrumbs in the refrigerator for some time and coat various meats .
Just pay a bit of attention to the baking time .. do not overcook or do not leave it raw.

Ingredients :
- 4 boneless, skinless chicken breast halves
- 1/2 cup mayonnaise
- 1/4 cup parmesan (grated)
- 4 tsp herbed breadcrumbs

- 2 cups breadcrumbs
- 2 Tbsp dried parsley
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/4 cup parmesan
Preparation :
- Prepare herbed breadcrumbs by mixing all ingredients together.
- Store in a airtight container and keep in the fridge.
- In a bowl, combine mayonnaise and parmesan.
- In a pan lined with parchment paper place breast halves.
- Coat evenly with mayonnaise/parmesan mix.
- Sprinkle with herbed breadcrumbs.
- Cook in preheated oven at 210C for 20-25 minutes.
