Falafel

Last week my daughter wanted to eat falafel and I couldn't let her down. The falafel is a chickpea fritter of Israel origin. My daughter gave me the recipe that her classmate makes and she likes and I made it !

Certainly it was an opportunity for me as I had not ever make falafel. In general, I like chickpeas but besides soup (red or white) I hadn't cook them. The preparation was interesting. As for the taste ... special. My daughter, however, was excited and she really liked them and that was my reward. It worths trying this falafel recipe. You can eat falafel as side dish or fill arabic pita bread along with hummus and have a light meal.

Ingredients : 

 
  • 250 gr chickpeas
  • 1 red onion
  • 2 cloves of garlic
  • 2 tbsp fresh parsley
  • 1 tsp coriander powder
  • 1 tsp cumin
  • 2-3 tbsp all purpose flour
  • salt & pepper
  • 1/2 ltrs sunflower oil for frying
for serving 
  • arabic pita bread
  • slices of tomato
  • slices of red onion
  • hummus
  • lettuce
 

Preparation : 

 
  1. Place chickpeas in a bowl with water that covering them and soak them overnight.
  2. The next day, drain water and boil them in salted water for about half an hour.
  3. When ready, strain and keep 1 cup of the water aside.
  4. Blend chickpeas till you crumbled.
  5. Separately blend onions, garlic and parsley and add them to the blended chickpeas.
  6. Add the spices, salt and pepper according to your tase.
  7. Add flour and stir very well till you have a tight mixture that can be formed into balls.
  8. In a deep frying pan heat oil.
  9. Take spoonful from the mixture and form balls of a walnut size.
  10. Fry them till dark golden on both sides.
  11. Place in paper towel to absorb excess oil.
  12. Serve by placing 2-3 falafel in the pocket of arabic pita bread, adding tomato and onion slices, lettuce and a tablespoon of hummus.
