Mixed greens with bacon, cottage cheese and fried egg

 

In our family, we usually "skip" the breakfast. Within the week, we just grab a coffee and that's it.

But that's not the case in the weekends. Depending on the time we wake up, we enjoy our coffee with assortments. That can be a toasted bread with butter and jam, or pancakes, or croissants and donuts.

What salad has to do with the breakfast then? Um ... when wake up call is after 11am, then the stomach wants something more ... Is there anything better than a green salad with various greens, crispy bacon, cottage cheese (we want it to be light) and complete the dish with a fried egg on top ? Of course after having this salad I do not think you'll be able to have lunch.

Alter the ingredients according to what you have in your fridge and according to your taste and enjoy. In case you decide not to have breakfast at all, this salad is perfect for light lunch.

Ingredients : 

 
  • 2 cups of mixed greens (lettuce,rocket,lollo verde,lollo rosso)
  • 5 slices of bacon
  • 50 gr cottage cheese
  • 1egg
  • 1 tbsp vinegar
  • 1/2 tsp dijon mustard
  • 3 tbsp olive oil
  • salt, pepper
 

Preparation : 

 
  1. Fry slices of bacon until are crispy.
  2. Take them out of the pan and put them on a plate that is lined with paper towel to absorb grease. Put aside.
  3. In a small bowl mix vinegar, mustard and oil until combined.
  4. Season with salt and pepper, stir once more and put aside.
  5. In a plate put the washed and bite sized greens.
  6. Add bacon is small pieces and then add cottage cheese.
  7. Pour dressing and toss.
  8. Fry the egg and top the salad.
  9. Season with salt/pepper and enjoy.
