Stew with sausages & peppers


First aid dish today. Fast and without much trouble and you do not need to be an expert in the kitchen to prepare it.

Could be eaten with only the escort of fresh bread but you can accompany it with french fries or a nice rice. Basic ingredient is the beloved sausages. Definitely our first thought is to cook sausages in the barbecue or fry them in the pan. But I think today's recipe is equally delicious. If you "overdo" it with the spices then is you have a hot dish ideal for drinking your beer!

Do not forget the fresh bread to dip in the sauce.




Ingredients : 

  • 3 sausages (cut in round pieces)
  • 3 tbsp olive oil
  • 1 big red onion (finely chopped)
  • 3 cloves of garlic (finely chopped )
  • 3 bell peppers (1 green, 1 yellow, 1 red)
  • 500 gr. tomato juice or 3 medium fresh tomatoes
  • 50 gr. red wine
  • 1 tsp dry crushed chilli peppers
  • 1 tsp smoked paprika
  • 1 tsp sugar
  • salt & black pepper

Preparation : 

  1. Prepare ingredients.
  2. Cut sausages in 3cm round pieces, finely chop the onion and the garlic, cut peppers into stripes.
  3. Heat the 2 tbsp of oil in a big saucepan and saute the sausages.
  4. When browned, take the out with a slotted spoon and keep them aside.
  5. In the same saucepan add the rest of the oil and saute the onion.
  6. When softened, add the garlic.
  7. Add the wine.
  8. When alcohol evaporates, add the tomatoes, the spices, the sugar, salt & pepper.
  9. Bring to a boil and add the sausages and the bell peppers.
  10. Add a bit of warm water if necessary.
  11. Stir and let food simmer for about 20 minutes.
