Raw vegetables salad
We can grab a carrot and eat it raw. I think that we wouldn't grab a zucchini and eat it raw. As regards cauliflower and broccoli, is out of question.
But when you get these vegetables, you add onion and radish and pour a sauce made of sesame oil, then you can change your mind on eating raw vegetables. At the time I was preparing this salad, my husband commented that he does not like raw vegetables. My response was ... taste the salad and in case you do not like it, I'll eat it. However he liked it ! Not only he liked it but he told me that I was right to insist on tasting it.
I tasted this salad, made by Chef N.Katsanis, when I was invited to Thessaloniki by Bros Haitoglou company. I loved that salad. The flavor was delicious and of course I was looking forward to returning home and recreate it. It's easy because you do not need any special cooking preparation and the more you let it marinate the more the flavors emerge. Even if you do not eat raw vegetables, I'm sure this salad will satisfy you.

Ingredients :
- 1 small cauliflower
- 1 small broccoli
- 2 carrots
- 2 zucchini
- 1 red onion
- 2 radishes
- black sesame seeds for decoration
for the dressing
- 1/2 cup white wine vinegar
- 1/2 cup honey
- 1 tbsp mustard
- 1/2 tsp salt
- 1 & 1/2 cup sesame oil
- 1 tsp sesame seeds
Preparation :
- Wash and clean all vegetables.
- Peel where necessary.
- In a bowl place florets of cauliflower & broccoli.
- Add onion rings, carrot and zucchini slices.
- Cut flakes from radish and add into the bowl.
- In a small blender combine ingredients for the sauce.
- Pour onto salad.
- Stir, so that all vegetables are coated by the sauce.
- Cover with cling film.
- Place salad in the fridge for at least 6 hours.
- Sprinkle black sesame seeds on top and serve.
