Sweet potatoes with eggs & cheese


Potatoes and eggs are favorite materials. Especially the potatoes. In any form. Boiled, fried, roasted! Many years ago, my mom said that I had to marry a potato producer from Thiva (it was the time that potatoes from Thiva were the hit) so that he brings me the potatoes by the sack. It was the only way to enjoy my beloved potatoes.

Under normal circumstances, when I make french fries, the following happens : I fry the first batch, put in the dish and I fry the second. Meanwhile I start eating from the first. When the second batch is ready, the first is gone. A third is prepare while I'm "stealing" from second. Eventually I decide to stop since this can go on and on until I run out of potatoes. I am a potato person, yes I am.

So, I had to try the sweet potatoes that can be easily found in the market lately. I've done them fried and grilled. It is equally tasty. Still can't decide on whether I like the "normal" or the "sweet". I will continue the tests till I come up with a result ... lol The recipe today is sweet potatoes and eggs in the oven. You can prepare your current dish for breakfast/brunch or even enjoy it as a light lunch.


Ingredients : 

  • 2 medium sized sweet potatoes
  • 1 red onion
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 2-3 eggs
  • 2 tbsp parmesan
  • 2 tbsp cheddar
  • slices of toasted bread

Preparation : 

  1. Preheat oven at 190C.
  2. Peel the sweet potatoes and dice them. Cubes should not be too small to prevent from burning in the oven.
  3. Dice onion in small cubes.
  4. In a bowl place potatoes, onion, olive oil, salt and pepper.
  5. Toss very well and place ingredients in a deep baking tray in one layer.
  6. Roast in the oven for 15-20 minutes, depending on the oven, till potatoes are almost done and are soft.
  7. Remove from the oven and sprinkle with of the cheeses.
  8. Crack the eggs on top and sprinkle with the rest of the cheeses.
  9. Return to the oven and cook for about 15 minutes, till egg whites are done and set.
  10. In a plate put a slice of toasted bread, top with egg and potatoes and serve.
