Farfalle in the oven
Beloved recipe. For many years it was the first choice to the feasts. I tried the dish from Alice (former wife of my colleague Kyriakos), I liked it and of course I asked for the recipe. Since then I have done it countless times. Mostly at gatherings but not only.
For me, who was not familiar with cooking (back then) was an easy recipe, that had always been successful. It was always a hit among other dishes and satisfactory for all tastes. I must admit that in recent years, while experimenting with more difficult recipes, I forgot about this one.
So I grabbed the opportunity when Keti asked me for a pasta in the oven recipe. The recipe I am giving you is the one I got from Alice. But today I made a few changes so that I use materials that I already had at home. And the basic material I wanted to use were Farfalle. A gift from my daughter. She brought me farfalle from a trip to Italy. They are called "farfalle tigrate", i.e. tiger butterflies, I guess because of their shape and colour. So it was about time to try them. As regards cheeses, I used parmesan and cheddar that I had in the fridge. Yourself, if you decide to make this recipe, alter the ingredients according to your preference or what you have handy. I have to point out that mini size pasta is ideal. Occasionally I've used penne, bows, rigatoni, macaroni and even fussili. I would suggest not to use spaghetti because it will not sit nicely as a base and you'll lose material from the intermediate layers. Whatever you decide to use as ingredients, the result dish will be delicious.

Ingredients :
- 500 gr pasta (farfalle, mini penne, shell, canneroni etc)
- 400 gr tomato cut in small cubes
- 10 slices of ham
- 10 slices of bacon
- 500 gr edam cheese (grated)
- 250 gr gouda cheese (grated)
- 250 gr heavy cream
Preparation :
- Preheat oven at 180C.
- Boil pasta in salted water, al dente.
- When ready, strain them and blanch them with olive oil and set aside.
- Cut ham and bacon in small pieces.
- In a baking pan, make a layer with half of the pasta.
- Spread half of the tomato on top and sprinkle with half of the ham and bacon.
- On top, make a layer with half of the cheeses.
- Add, again in a layer, the rest of the pasta.
- Continue with the tomato, the bacon and ham and end with a layer with the remaining cheeses.
- Pour over the heavy cream.
- Cook in the oven at 180C for about 35-40 minutes, till cheeses are melted and surface get a golden brown colour.
- Remove from oven and let it cool down a bit so that it's easier to serve.
