Zucchini fritters & tahini dip
The majority of people like the variety of tastes on the table. It's so nice to have various hors d'oeuvres to complement your main meal. It is not necessary to be "fancy" dishes. A pie, a potato salad, an eggplant dip, or even tzatziki , is enough to make your daily menu richer.
But how easy is to have variety in the everyday meal ? If someone was asking me a while ago, I would say "very difficult for every day" .. However, if there is will and organization everything can be done. It is not difficult to prepare appetizers or snacks that you can keep in the fridge for 2-3 days and have the variety you need. Make a spicy cheese dip, cheesy truffles, a betroot salad, a cheese yoghurt pie or even a savory milk pie and you're ready. I know it is not always possible, and I did not manage it at all times, but if I organize myself a little better I think I will succeed.
Today's recipe is something that can be prepared ahead and accompany your main course. The fritters can also be eaten cold and that make them ideal as a supplement. The tough thing is to grate the zucchinis. Beyond that, everything is easy. Little attention is needed so that you don't have a lot of liquid in the mixture (from zucchini and onion) and the result will be delicious. In addition, the aroma that fritters get from being fried in the sesame oil is awesome.

Ingredients :
zucchini fritters
- 1 kg zucchini
- 2 big red onions
- 1 tbsp spearmint (finely chopped)
- 4 eggs
- 500 gr feta cheese
- 1 tsp ground black pepper
- about 250 gr all purpose flour (may need more or less)
- sesame oil for frying
tahini dip
- 150 gr tahini
- 80 ml sesame oil
- 1 tsp salt
- juice of half lemon
- 1 tsp mustard powder
- mustard seeds
Preparation :

- Grate zucchini and onion.
- Place grated zucchini in a bowl, sprinkle with salt, toss and leave aside for about an hour to soften.
- Place grated onion in a bowl and leave aside.
- An hour later, strain zucchini and onion, place them in a clean bowl.
- Add spearmint, eggs, feta cheese, pepper and stir.
- Add as much flour as needed to get a thick paste/puree.
- Heat sesame oil in a frying pan and when hot take spoonful of the mixture and fry.
- Fry the fritters over medium heat till both sides are golden brown.
- Remove from pan and place on paper towel to absorb excess oil.
- Serve with tahini dip.
tahini dip
- In a blender put sesame oil, lemon juice, salt, mustard and blend to combine.
- Transfer in a bowl, add tahini and mustard seed and stir very well.
