Cherry tomatoes salad


As promised, today's recipe is a salad.

I've tasted this salad on the premises of AB, at the lunch that was arranged for us. The recipe by Chef Alexander Papandreou, with ingredients that can be found in all AB stores.

The recipe was provided by Mr Papandreou and the AB team and of course I did not miss the chance to try it. A recipe that is open to variations and can be tailored to the taste of everyone. It can stand perfectly as a light supper.

It is easy, hearty, delicious, with Greek products ... what else to ask for?



Ingredients : 

  • 4 small rusks with oil (ladokoulouro)
  • 200 gr cherry tomatoes
  • 40 gr capers ( unsalted/water free)
  • 4 gr parsley finely chopped
  • 30 ml olive oil
  • 15 gr sesame (toasted)
  • 50 gr Ladotyri cheese of Mytilini (coarse grated)
  • salt & freshly ground pepper
  • 10 gr herb pesto

Preparation : 

  1. Cut the tomatoes in half and mix well in a bowl with capers, parsley, olive oil, sesame seeds, salt and freshly ground pepper.
  2. In a deep plate lay the rusks after we have soaked them in water very quickly.
  3. Add the tomatoes, the cheese and last the pesto.
  4. Serve and enjoy.
