Fluffy burgers
What are we going to build again? This bounces on the wall! A nice! Βricks are for lunch today!
These are some of the comments made in my kitchen, when we were having burgers. Ah... great burger stories! Usually burgers came out heavy like stone or they had a straw flavor. Thru the years, I trusted various "remedies" for my burgers. One was saying add vinegar for fluffier burgers, the other one, add tomato cubes to make it juicy, the next one, put breadcrumbs ... and many more tricks were heard. But for some reason, I never had the combination of tasty and fluffy burger.
Till I found the recipe I'm sharing with you. Fluffy, juicy and delicious burgers. And of course the recipe is a standard for me. A recipe that always succeeds, and gave an end to the various comments about "bricks" ... lol. When I firstly tried the recipe, I was surprised by the very soft and perhaps "watery" mixture. I was wondering how this would end up to burgers! But it does. With the same mixture, replacing parsley with mint, I made heavenly fried meatballs. This recipe always turns out great.
So the search for fluffy burgers is over. I hope for some of you too.

Ingredients :
- 1kg beef minced meat
- 2 red onions (grated)
- 280 ml fresh milk
- 2 eggs
- 1 bunch of parsley (chopped)
- 280 gr breadcrumbs
- 100 ml red wine
- 1 tsp oregano
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp sweet red pepper
- 100 ml olive oil
Preparation :
- Mix all ingredients and knead well.
- Place in the fridge for about 30 minutes to firm a bit.
- Take out of the fridge and take some of the mixture and turn into burger.
- Continue with the rest of the mixture.
- Line a greaseproof paper in a pan and place your burgers.
- Bake in preheated oven at 180C for about 45 minutes.
