Fresh pasta and mushroom sauce
Let's see what we've learned. Well, seminars are worth when you practice what you learn. Must try and re-create what you saw, in your own kitchen .
So ... after the Recipease workshop ... it was the time for me to create pasta. I got my flour, my eggs. the bowl and there I was. Started making pasta. All right ... I made the dough, but I wondered ... is it at the right consistency? Is it like the dough in the workshop? Does it need a little more kneading? Chef Jimmy said it should be elastic and silky ... is it? When I was sure that my dough was like it should be, I placed it in the fridge to rest and got ready for cutting. Since I don't have a Pasta Machine for cutting ... I called forth my stand mixer that has a component that cuts dough into pasta. I got the dough out of fridge and started playing.
I really enjoyed the process so far. Joy!!
Dry pasta from s/m can be handy, but fresh homemade pasta can not be compared with anything.
Ingredients:
for pasta
- 300 gr flour (type 00)
- 3 eggs
for the sauce
- 2 tbsp olive oil
- 250 gr heavy cream
- 1 red onion in slices
- 500 gr mushrooms (I used porcini & shitake)
- salt and pepper
Preparation:
Pasta
- Pour the flour in a bowl and make a well in the center.
- Break the eggs and place them in the well.
- Beat the eggs with a fork without adding flour at this stage.
- When eggs are beaten, start mix the flour with the eggs.
- Use your hands to knead till everything is combined and you have a dough that is elastic and silky.
- Shape dough in a ball and put in fridge for 30 minutes to rest.
- Take out of fridge and cut into pasta.
There are three ways to cut dough into pasta.
Classic
Roll the dough as you do for the pies.
When you have the desired thickness, sprinkle a bit of flour on top and fold loosely from one of the narrow sides.
With a sharp knife cut stripes to the thickness you want the pasta to be.
Unfold and you're done.
With a stand mixer
Attach the component to the mixer.
Take small pieces of the dough and put it in the slot.
Switch on the mixer.
Lightly flour surface where the pasta will drop .
Cease operation when you have the desired length of pasta.
With a pasta machine
Set the "regulator" knob to position no 1 or 9 (depending on the model of your machine).
Check that the drums are in the wider position.
Pass the dough through the machine.
Fold the dough 3 times and pass through machine again.
Fold and pass through, once more.
Set the knob to the next position and pass the dough trhough.
Repeat process by setting the knob at the next position each time till the dough is at the desired thickness.
When ready, cut dough to the length that you want your pasta and pass it through cutting rollers of the machine.
Your pasta is ready
- Put salted water to boil in a large saucepan.
- In a large and deep frying pan add the oil.
- Add the onions and stir until caramelized.
- Add the mushrooms.
- Mix well and sauté the ingredients.
- Salt and pepper.
- At this stage, add pasta into the boiling water and gently toss them.
- Add heavy cream to the pan with the mushrooms. Stir.
- Boil pasta for 3 minutes (depending on thickness) .
- Take boiled pasta and add to the pan with the mushrooms.
- Mix well and serve.
